CRDE 1145 - Basic Skills

The course will cover proper sanitation and safety in the kitchen, measurements, the chemistry of cooking, basic knife skills, use and identification of herbs and spices, and stocks and sauces. Students will also learn the safe operation of kitchen equipment utilized in the food service industry.
